Para los amantes de las ensaladas, hoy dos nuevas versiones cargadas de color, sabor y proteínas! Viva la quinoa y las verduras para mantener una dieta sana y nutritiva!!!
Ingredients. 1 cup of quinoa. 1 cooked carrot, 1 cooked potato, 1 cooked beet. 1/2 cup of pea and 1/2 of corn and 1/2 dry tomatoes. 1/2 onion.
Soak the quinoa overnight in water. Remove the water and rinse the quinoa the following morning. Pour the quinoa in a saucepan and cover with water. Cook for 10 minutes on medium heat.
In a large bowl, put the quinoa. Add beet, carrot and the potato cut in small cubes. Add pea, corn, dry tomatoes and ½ thinly sliced onion. Finally season it with 4 tbsp of olive oil and balsamic.
Spinach and shrimps
In a saucepan, put the shrimps with 1 tbsp of garlic and basil. Add 1 tbsp of olive oil and cook for 3 minutes.
In a large bowl, put the baby spinach. Add the 1 cup of carrots, pumpkin and 1 cup of pineapple cut in small cubes. Add ½ thinly sliced onion. Add the shrimps. Finally season it with salt, 4 tbsp of olive oil and balsamic, and 1 tbsp of honey.
