Muffins
Ingredients. ½ of butter, ¾ cup of white sugar, 4 tbsp of brown sugar, 1 egg, 1 cup of flour. ¾ cup of coconut, ¾ cup of almonds, ¾ cup of blueberry, 1 tbsp of vanilla.
With a fork mix the butter, white, and brown sugar in a bowl until creamy. Add one egg and continue mixing until fully incorporated. Add coconut, vanilla, blueberries, almonds and the flour and mix… fill muffins tins ¾ of the way and bake at 350 F. Serve warm, fresh out of the over, or at room temperature.
Banana ice cream. Ingredients. 2 bananas, 1 cup of yogurt. Peel the bananas and with a fork mash into a puree… into popsicle container. Fill each popsicle and freeze for 3 hours.
Another option is mix the banana puree with strawberry yogurt. Fill each popsicle and freeze for a couple of hours.
Orange ice cream. Ingredients 3 oranges, 1 cup of water. Squeeze a couple of oranges. Fill the Popsicle with the orange juice and freeze for a couple of hour. If there is too much pulp, add water to liquefy
